It started with a film.
Inspired by Chef — the story of a chef who leaves fine dining to sell Cuban sandwiches from a food truck — the owner opened a small stand in May 2019 on the Yakushi Ai-Road shopping street in Arai-Yakushi, marked by a pale-blue house.
The roast pork is marinated overnight in fresh-squeezed orange, lemon and lime with rosemary grown by the owner's mother, then slow-roasted as one large piece.
It is layered with ham, cheese, pickles and American mustard, tucked into hard-to-source Cuban bread, buttered on the outside and pressed on the iron until it sings — that is the Cuban sandwich.
There are only a handful of seats; takeout and Uber Eats are available too.
Large orders, catering and event pop-ups are all welcome.
Marinate. Roast. Press.
